Everything on the menu at Tomislav is spiked with a triple shot of imagination. As you sit overlooking ever-busy William Street there's the DIY fun of spritzing rice crackers with spray-on salt and vinegar flavours, while your bread is accompanied by a zippy concoction of wattleseed burnt toffee butter, served on a plinth. Equally fascinating is poached yellowfin tuna teamed with rainbow lime zest, a creamy cloud of 'sour' potato, and Chinese cabbage so thoroughly grilled it's near caramelised. Excellent vegetarian choices include a 'bridge' of grilled onion rings floating on a lush pea soup with crisped sweet cranberry. A textures of caramel dessert combines toasted walnuts, barbecued sweetcorn and buttermilk ice-cream. The theatre of the food isn't quite matched by the pedestrian decor; best distract your eye with the bustle of the kitchen or street and city-lights views from the more scenic balcony. Waiters are smart, friendly and highly approachable - just like Tomislav Martinovic's fun-charged, dazzling menu.
