It’s likely a PhD thesis has been written about pizza bases, but the short and sweet analysis of Vacanza’s offerings is that they’re Goldilocks good (read: just right). Thin, with a little crunchy charring on the surface, and topped simply with the likes of sweet tomato and creamy fior di latte. The latter features on the ‘Vacanza’ along with roasted mushrooms, truffle oil and pecorino for a dreamy result, although it’s hard to go past the simple margherita. Light-as-air tiramisu makes a fine finale. There’s a Vacanza in Surry Hills, too, but this original narrow, two-storey spot is more comfortably casual and family friendly.
