You can imagine James Bond at home in this dramatically stylish space, with its black banquettes, vast glass wine cellar and backlit meat cabinets. Positioned to the side of the equally slick and spacious Hilton foyer, the sense of dining in a hotel is heightened on quieter nights, when busy Vintaged takes on a character of its own. Carnivores will delight in the wide range of pasture- and grain-fed steaks from notable breeders, but the kitchen deftly turns its hand to other sophisticated offerings, too. Pan-fried prawns with raisins and pine nuts are drizzled in a nutty brown butter and tossed through luscious little goat curd dumplings that provide a delicate tang. Cone Bay barramundi is tender with salty, crunchy skin, served alongside creamy potato cake and a parsley salad. A seven-hour roasted lamb shoulder for two could feed an army, but the unctuous, falling-apart meat will keep you reaching for more. Silky cubes of lemon parfait on a blanket of ginger crumbs are a stylish finale, leaving taste buds pleasantly shaken and certainly stirred.
