Slip off your shoes, slide your feet beneath a tatami room table and sip champagne as the setting sun casts shimmering light over the Noosa River. Mixed sashimi is cut with precision and exquisitely presented, while the shichimi niku - Japanese seven-spice grass-fed hereford tenderloin with wasabi sweet potato mash, enoki and shimeji mushroom sauce - is poetry, the steak sliced and dramatically fanned across a white platter. Ochazuke, a selection of local fresh fish steamed in sake with local spanner crab, rice and konbu, comes with a rustic and mysterious sencha dashi broth, with tannins from the tea adding an interesting edge. Finish with one of the unique desserts, such as azuki bean and duck egg doughnut with roasted rice ice-cream, matcha tea powder and rice puffs.
