A bracing Lao salad is a fitting start to a meal at Yum Sab, which translates to ‘tasty salad’. With shredded carrot, mint, red onion, lime juice and fish sauce, plus additions like pungent dried and deep-fried fish, and minus plentiful palm sugar, it’s a sourer, more in-your-face version of the Thai rendition. Follow the lead of in-the-know locals and try the popular crisp-fried quail with lemon sauce, whole fried fish, or ask for off-the-menu fare such as duck embryo served in the shell. A dessert of deep-fried ice-cream gives you your sugar hit, but we prefer the subtler charms of sticky black rice with mousse-like coconut custard.
