Canberra’s Chairman and Yip group is bringing the chef from its Michelin-starred Hong Kong restaurant to Canberra in October for Good Food Month degustation dinners at Malamay. Chairman opened in Hong Kong in 2011 and has won a series of accolades, including a Michelin star, and Time Out’s gong for best Cantonese restaurant in the city.

Chef Tung Kwok Keung’s menu will be ‘‘a return to basics, food full of flavour without the smoke and mirrors’’, Malamay’s Amy Tran, pictured, says. The menu will include dishes such as char-grilled prawns with salted egg yolk, steamed mud crab with 18-year-old Chinese wine; and Yunnan spicy roast duck with garlic onion rice. With five wines from the Mornington Peninsula’s Ocean Eight. October 3 to 5, and 10 to 12, $105 without the mud crab, $125 with the crab, $65 for wine, 6162 1220.
