Zacharay Tan, former sous chef at Bistro Guillaume Melbourne, and Jacqui Ektoros, a graduate of Guillaume at Bennelong, will be in the kitchen at Devon, a new cafe opening next week at 76 Devonshire Street, Surry Hills.

Owner Derek Puah wants to push the boundaries ''between casual cafe and gourmet dining space''. Devon's own ''green wall'' will keep the kitchen in supply of herbs.
