Bucci owner Spencer Patrick is adding another venue to his portfolio.

He already has two Buccis – one in Port Douglas, the other in Brisbane. Plus his more formal diner, Harrison's, also in Port Douglas. This time, in partnership with Bucci head chef Shaun Malone, he's going even more casual with Bucci Piada which will be tucked behind Bucci proper in Fortitude Valley's James Street.

"Piada or piadina is a typical Italian street food, it's a kind of flatbread, usually made with lard and filled with different things," Patrick says.

"They're hugely popular in Italy and becoming so here too. I thought it was the perfect fit for James Street where there are lots of offices and people who don't have time to stop for lunch."

The piada will be filled with Italian cheeses such as mozzarella, burrata, stracchino and gorgonzola as well as prosciutto, salami and pork with salads and sauces. Patrick says they'll also offer classic Italian soups such as minestrone.

Piada will be at Shop 9, 15 James Street, Fortitude Valley, and is set for an April opening.
