Shannon Bennett's name is being bandied about, along with the usual Sydney and Melbourne suspects, as the potential replacement for chef Guillaume Brahimi at The Sydney Opera House. Brahimi decided not to re-tender for the Guillaume at Bennelong site after The Sydney Opera House declared its preference for a bistro-style operation.
Bennett may have Vue de Monde but his bistro and cafes show his savvy at the casual end of the market. The Opera House would not comment on tenders lodged saying the successful applicant will be announced later in the year. Bennett's spokeswoman said she could not comment.
