While in the lab reinventing the lamington and cream bun for Australia Day, the sorcerer of sweet things, Adriano Zumbo, confirmed his 2016 expansion trail will include Sydney's north. "We're opening at the Interchange in Chatswood in March," he says. "It'll be our only one on the north shore." The macaron master says there'll be an Asian theme to the design at the Chatswood store, but it won't include the sushi train delivery system he introduced at his outlet inside The Star. "It doesn't work mid-week," he explains.

There are other changes in store for Zumbo's Sydney empire in 2016 too. "We're looking at closing the Waverley store and moving to another location in the east. It'll happen, I just don't know when," he says.
