High tea, Adriano Zumbo-style, is coming to Melbourne. And there won't be a tiered cake stand in sight.

The celebrity pastry chef will open an "afternoon tea salon", Fancy Nance, in late March on the site of My Kitchen Rules judge Manu Feildel's former French bistro, Le Grand Cirque.

Fancy Nance is named after Zumbo's mother, Nancy.

The pastry chef is planning a modern, degustation-style menu served on share plates. The menu is yet to be confirmed, but if scones do feature, we're betting they'll have quite a twist.

"It will be a fresh take on the high tea concept. I am getting rid of the traditional stands and instead the desserts will be served on share plates, almost tapas style," Zumbo says.

The large space will be revamped with a brass cocktail bar, brass detailing and custom-made pink booth seating.

Fancy Nance will open daily, serving a set-price high tea throughout the afternoon, and a different dessert offering in the evening. It will be located at 21 Daly Street, South Yarra, around the corner from Zumbo's Melbourne patisserie in Claremont Street.
