Albert St loses its founders, retains chefs

Ruth Giffney and Stuart Brookshaw have left Albert St Food and Wine.

The husband-and-wife team were the founders and managers of the Brunswick restaurant.

Insisting nothing is changing in the business, Giffney says, "We had a two-year plan and are moving on to do other things."

The restaurant, on the corner of Albert and Sydney roads, is owned by Nine Spices Pty Ltd and will retain Philippa Sibley as executive chef and Jason Rodwell as head chef.

Giffney, who has "trained the front-of-house team up for running the floor", is moving into consulting work while Brookshaw has returned to the wine industry while the two make "plans for another project for the new year''.
