Baker cooks up plenty of changes

South Yarra's MoVida Bakery will become Tivoli Road Bakery, under new ownership, from Friday.

Head baker Michael James and his wife Pippa have bought the business from Frank Camorra and Andy McMahon of MoVida.

James, who has been there since day one in April last year and is the man behind those salted caramel doughnut, is closing tomorrow to "change the coffee machine and the drinks".

The bakery uses organic and local produce for its breads and other products in the kitchen so, in keeping with this ethos, he is switching the coffee from Lavazza to Small Batch and soft drinks from San Pellegrino to Daylesford. Pippa will "help with operations and set-up", he says, although she is busy as the general manager of Andrew McConnell's Golden Fields in St Kilda and Cutler & Co in Fitzroy.

They are planning to extend the cafe space and, while the menu won't change specifically, "it will evolve over time", the baker says.

Tivoli Road Bakery will be open Tuesday to Sunday.
