We're not entirely sure where Sydney is going to find the diners to fill them all, but you have admire the pluck of the operators behind the tsunami of new venues headed on our way. The sheer number of new restaurant seats is staggering.
A couple of new places open the doors this week: former Light Brigade chef Ruben Martinez in the kitchen at Giro Osteria in Cronulla, and entrepreneurial Melbourne operator Barrie Barton begins his Sydney assault with a bar, Golden Age, at the Paramount Pictures building in Surry Hills.
Golden Age was looking more dusty than golden when we stopped by, but Barton is confident it'll be ready to go public later this week.
