Belle's Hot Chicken pops up at Bondi Icebergs

Cult Melbourne eatery Belle's Hot Chicken has flown north for the summer.

Fitzroy's favourite Southern fare has taken up residence at Bondi's Icebergs Bar, with the pop-up opening for one day a month since November. Its final sitting is on January 18.

The event - dubbed "chicken with a view" - is a collaboration between Icebergs head chef Monty Koludrovic and Morgan McGlone from Belle's.

Koludrovic says the first two events have been hugely popular.

"[The December sitting] was in between Christmas and New Years and, to say the least, Bondi was buzzing," he says.

"We sold out of chicken."

For the pop-up's last hurrah this season (although the pair have considered returning next summer), Koludrovic and his team will be serving up tenders and wings alongside pickles, coleslaw, sauce and white bread.

But it's not called hot chicken for nothing. The heat on offer ranges from "Southern" (deep fried in a mixture of whisked cottonseed oil, butter, cayenne pepper and paprika) to chilli-coated "hot", which is still a far cry from the "really f---ing hot" option available at the original Melbourne joint (chicken coated in habaneros with seeds - consume at own risk).

Those dropping into Icebergs this weekend can also get their hands on the "baller bucket", which includes 12 full wings, coleslaw, mash and gravy, pickles, bread and ranch sauce.

And if all that spicy Southern lovin' gives you the sweats, don't worry: a cool off in the ocean is just downstairs.
