A businessman has ambitious plans to set up in Brisbane what he hopes will be Australia's best cheese shop.
But don't get your cheese knife and water crackers out just yet, cheese lovers – it could be as long as a year before the Cheese Room opens its doors, Tim Neilsen said.
"We want to build the best cheese shop in Australia and showcase cheese from all over world," Mr Neilsen said.
Plans include a cheese-ripening room, and a simple cafe with a daily blackboard menu and wine list.
Mr Neilsen said the shop would be modelled on cheese shops he had seen in Europe. He is looking for a site, eyeing the Woolloongabba/West End suburbs, in particular.
“We started thinking about it about eight or nine years ago, but we ended up doing the family thing," he said. "Now my wife doesn't want to go back to teaching, so it's the perfect opportunity.
"If a fantastic building in the right location came up, we'd maybe consider doing it earlier."
Plans include potentially selling cheese online, too.
