Bistro Moncur opening at Mosman's Buena Vista Hotel? It's one of several possible ramifications of the mega deal pieced together last week by Public House Management Group which added the Four in Hand Hotel to a portfolio that already includes The Woollahra Hotel and announced chef Guillaume Brahimi as its culinary ambassador.

Public House managing director Mitchell Waugh confirmed expansion of the Bistro Moncur brand is being explored, which Public House inherited when it bought The Woollahra Hotel earlier this year. Redevelopment of the Buena Vista kicks off next March, and the addition of a restaurant "along the same lines" as Bistro Moncur is on the cards. They are also "considering" using the famed moniker. The addition of Brahimi's services to the group offers the final piece of the puzzle, the French chef experienced with both fine dining and bistro-level. Indeed Brahimi will also open his own bistro in the city next year.

His role at Public House sweeps across a portfolio that also includes The Collaroy Hotel, Forbes Hotel, The Royal and The Narellan. Public House's acquisition last week of the Four in Hand pub will see chef and co-owner Colin Fassnidge depart its two-hatted restaurant next February. "The plan is to eventually rebirth the food I cook here elsewhere," Fassnidge told Good Food.
