Australia's finest pastry chefs feature in a glossy new title profiling the wares of some of the world's best patissiers. In his book The New Patissiers, author Olivier Dupon met 38 patissiers from around the globe, persuading them to part with 89 of their recipes. Peppered among a selection of tempting images you'll find Melbourne heroes Andrea Reiss (Chez Dre) and pop-up dessert king Pierre Roelofs, as well as Sydney chefs John Ralley (Wildfire) and Shangri-La Hotel's Anna Polyviou. Other big names include Sicilian chocolate maestro Carmelo Sciampagna and Noma's Rosio Sanchez.

The New Patissiers by Thames & Hudson is out now. RRP $70.
