Take a number Sydney, we are in for a full-blown summer of food sold by the kilo. Sails on Lavender Bay co-owner Greg Anderson is the latest to join the party, opening Brasil by the Kilo, at 4/90 Mount Street in North Sydney.

In recent months everything from American barbecue to the bar food at the recently reopened Foveaux restaurant in Surry Hills has gone weigh and pay, and Brazilian examples of the genre have already popped up in Manly and the city.

Anderson, a product of the Aria kitchen, and his Brazilian wife Patricia Nunes, have long plotted to replicate the authentic restaurants that criss-cross Brazil. "I hate the word buffet, I prefer family-style. It's presented more like Kitchen by Mike, but you serve yourself," Anderson says. Head chef Luiza Gomes, who has returned from a stint working in Sao Paulo, will produce Brazilian dishes including meatballs and beans and pork.

"It'll be authentic but tuned for Australia. Where the Brazilians might use cassava we'll use sweet potato," Anderson says. The restaurant's giant mural is inspired by the work of Sao Paulo street artists.
