Brix to become Hammer & Tong

The short-lived Brix, on Westgarth Street, Fitzroy, is set to become Hammer & Tong. Chef Simon Ward, recently of Duke's Cafe and Roasters in Windsor and, before that, Vue de Monde, has joined former Jacques Reymond sommelier Dennis Ferreira to open the 60-seat cafe, serving breakfast and lunch, with dinner three nights a week. The focus will be on great coffee, says Ward, with barista Pim Muter (ex St Ali and Brunswick's Wide Open Road) manning the Kees Van De Westen Spirit espresso machine using Duke's coffee. Ward is crafting a diverse menu that will draw on his high-end dining and cafe experience. "There'll be vegetable dishes, salads, panini, hanger steak and duck eggs with truffles for breakfast." Floor manager Ferreira will create the wine and drinks list. Hammer & Tong is expected to open mid-February.
