B'Stilla spin-off brings Moroccan street food to Fitzroy

Jason Jones, the chef who made queuing fashionable at Mamasita in the city and B'Stilla in South Yarra, is set to test our staying power again when he opens his new business in Fitzroy.

While Jones has the keys to the tiny Brunswick Street premises, he hasn't settled on a name, "but B'Stilla will be in the title".

The shop will be dedicated to Moroccan street food. Jones and his partner, Amy Watts, have just returned from three months in Morocco, Portugal and Spain, soaking up ideas for the food and the interior, which Watts will design.

Jones plans to fill the menu with dishes inspired by the food they sampled along the way, including 'The Mustafa', a sandwich of sliced brioche stuffed with crunchy roasted potatoes, cream cheese, harissa mayonnaise and cress, and the playfully named 'The Infidel', with the aforementioned ingredients plus bacon.

Jones says they'll serve non-alcoholic cocktails and lots of tea until their licence is approved. The pocket-sized venue has seating for 24 inside and 24 out and will be open daily from noon until late – Jones is talking 1am at weekends.

Takeaway will available from the front window, which may prove the speediest option as they won't take bookings – first in, first seated.

The venue at 277B Brunswick Street, Fitzroy, is expected to open in late-November.
