Burgers? Yu bet

Davis Yu, wunderkind restaurateur who operates South Yarra's The Millswyn and Claremont Tonic as well as Touche Hombre on Lonsdale Street, is planning to open a ''new concept'' burger bar in a disused car park next door to Touche, at 233 Lonsdale.

But as far as ''new concept'' is concerned, let's not read too much into the name that, regrettably, Yu plans to call Ol' Dirty Burger.

The name, he insists, is inspired by his ''nostalgic love of a dirty, greasy burger - something that sounds dirty, but is so delicious''.

Yu says he has drawn further inspiration from Burgermeister, an outdoor burger bar in Berlin, with a name he should probably have pinched, also. Yu says he wants to break down burgers to their basic elements. ''We're looking at the best type of buns to use, the different cuts and grind of meat, finding what makes the burger unique.''

Yu plans to be open for business by February, and expects to have only three or four burgers on the menu, including one chicken and one veg - assuming, of course, anyone still has an interest in burgers by then.
