Buzo will add a modern Asian restaurant to its growing Woollahra portfolio, as well as transplanting a Buzo-style Italian to the city.

Buzo co-owner James Hird confirms a number of city sites are on his radar, with the Bridge Street precinct - buoyed by incoming restaurants including the soon-to-be-relocated Rockpool - a strong contender.

The Buzo team is expanding at a rapid pace, with its Wine Library spin-off to be joined by a French bistro, Vincent, at The Hughenden boutique hotel. Buzo chef Mitch Orr is headed to work at 121BC, but a posse of new signings will take up the slack. Mike Eggert and Jemma Whiteman, who possess CVs glistening with top-shelf restaurants, have jumped in to help chef Chad Muir at Buzo and Wine Library.

They are cooking Italian for now, but the plan is they'll shortly be plating modern Asian in the neighbourhood. Hird argues there's ''a hole'' for Asian food in the Woollhara market, a view shared at Claude's, which will also join the Asian push.

Vincent, which opens on September 1, is also getting some exciting kitchen talent.

"[Buzo chef and co-owner] Todd Garratt will move over to Vincent, running the kitchen with ex-Bloodwood chef Jo Ward," Hird says.
