Canberra's Southern Blend Barbecue brings cupcake chicken to Tuggeranong markets

Cupcake chicken just might be the next food trend to take the capital - and you can ask Jeremy Scott about it when you see his stall at the Tuggeranong Homestead markets next week. Scott is a Texan transplant who's bringing his version of Southern barbecue to Canberra with a mobile barbecue business. "I've learned from my dad and he learned from his dad, so it's smoking barbecue. I decided I was going to do it here in Canberra," he says.

Scott uses a custom smoker built to his specifications by local metalworker JJ's Grillworks, which he'll take with him to some upcoming barbecue competitions in October (he's previously done the Port Macquarie Blues and BBQ Festival).​ He's been at various markets and shows around the region selling brisket, smoked chicken rolls, and pulled pork rolls. Eventually, he says, "I'd like to start doing events, doing weddings and 18th birthdays."

He's also come up with cupcake chicken - which uses a cupcake pan filled with shredded chicken with the skin on. Look for him at the next Tuggeranong Homestead markets - it's called Southern Blend Barbecue.
