Chef Alessandro Pavoni opening two new Chiosco locations

Twin-hatted chef Alessandro Pavoni​ has two northern Sydney locations in his sights for expansion, with restaurant openings planned for Balmoral and Newport. "Yes, it's true. Obviously it's subject to [development application] approval. We want to do more Chioscos," Pavoni confirmed to Good Food.

Chiosco is the more casual, "barefoot friendly" eatery he opened next door to his upmarket Ormeggio at The Spit. "I think at Chiosco I've fine-tuned with Italian food what people want to eat every day. It's what I like to eat as well. Not deep fried, more things like prawns cooked on charcoal," the chef says. Pavoni will open the new restaurants with business partner Bill Drakopoulos​​ and Ormeggio head chef Victor Moya. They've bought a building in Newport and have found a site at Balmoral. If all goes to plan, the new Chiosco restaurants will open later in the year.
