Chef Ashley Davis to open Copper Pot restaurant in Seddon

He'd just earned his second Age Good Food Guide hat at Pure South, Southgate. But when you're a chef itching to open your own place, eventually you need to scratch.

Ashley Davis has rolled up his sleeves to build his dream restaurant in the west. To be named Copper Pot Seddon, it draws on dishes the Melbourne-born chef learnt during a decade travelling and cooking at Michelin-starred restaurants in Europe.

European classics such as calamari grilled with garlic and parsley will join off-the-beaten-track dishes, all designed for sharing and with approachable pricing, Davis promises.

The 50-seat restaurant's interior will echo the European vibe, with oxidised copper as a design element.

Copper Pot Seddon is slated to open at 105 Victoria Street, Seddon, by the end of November.
