Chef Dwayne Bourke to work at Black Sheep

Wanting to spend more time with his young family, plus the luxury of a 10-minute commute rather than 90 minutes, brings chef Dwayne Bourke back to Geelong after 18 months at Southbank's Pure South. He has joined Black Sheep cafe and restaurant in the historic bluestone woolstore that also houses the National Wool Museum. ''Initially I'll be in the kitchen … but I will be looking after the whole venue as general manager so it will be a bigger job,'' he says. Bourke, who was previously at Pettavel, says he'll be ''looking at a French brasserie style serving good traditional dishes and making it more interesting to attract the business crowd for breakfasts and lunches''.
