Chef shuffle at Port Phillip Estate

Spectacular Mornington Peninsula winery restaurant Port Phillip Estate has announced a replacement for its founding head chef. Simon West departed the striking Wood Marsh-designed diner in September 2012. Taking West's place is Andrius Eidukas, who has been promoted from sous chef. Eidukas, from Lithuania, began his career in London at the Savoy Grill under Gordon Ramsay and also cooked at Anthony Demetre's Wild Honey in London's Mayfair. He plans to change little to the structure of the menu, keeping it seasonal with a European focus and built on the foundation of the estate's award-winning wines. ''The relationship between our food and wine is symbiotic,'' Eidukas says. ''In both pursuits we strive to highlight terroir and seasonality.'' Marco Gjergja, whose family owns the estate, says ''Andrius had shown excellent skill in his position as sous chef and he felt confident in accepting the position as head chef. The choice was natural.''
