Chinese restaurant Master to open in Surry Hills

Billy Kwong's​ relocation to Potts Point and the closure of Chui Lee Luk's Chow Bar & Eating House has created a rarity in over-supplied restaurant postcode 2010: a gap in the Surry Hills market.

"We think there's room for a Chinese restaurant here. It's just what Surry Hills needs. It's what we and all the other chefs eat when we finish work," says John Javier, who swings open the doors on July 31 at Master.

The chef, who has an impressive kitchen resume which includes Quay, Noma and Momofuku Seiobo​ has teamed up with Jarred Roker, from 212 Blu in Newtown.

Master opens in the site of the short-lived Watts on Crown restaurant. The opening menu will include black pepper crab and salt and pepper veal sweetbreads.
