Doughnut Time sets out for Brisbane events in its own food van Barbara

Sugar addicts who have been lining up for their fix at the hole-in-the-wall "doughnuterie​" in Fortitude Valley will be happy to know that Doughnut Time is going mobile, with its own food van (curiously named "Barbara") set to make appearances at Brisbane events and festivals from next Thursday.

Griffiths opened Doughnut Time in February and has garnered a loyal following, with queues along Alfred Street a common sight.

The van was the next logical step in response to doughnut lovers' demands, Griffith says.

"The whole idea of Doughnut Time is that it's a kiosk – a hole-in-the-wall, and we didn't want to expand to a group of shops. But it's been so popular. I've had people contacting me non-stop asking us to go to events and markets so it seemed the thing to do.

"To start we'll just be doing key events and festivals but we'll let it grow organically from there until we get to the stage that we'll have a Facebook page announcing where it's going to be."

He found Barbara, a vintage 1965 Carapark​ Astronaut, in an elderly lady's yard in Brisbane and had it restored to its former glory.

"It was painted bright pink when I bought it and she'd been using it as a kind of doll's playhouse in her backyard," Griffith says.

"She was quite devastated when she heard we were going to cut a great big hole in it."

The van can stock up to 1000 doughnuts when it hits the road, including the favourites like "You bacon me crazy" (bacon and maple) and the "Russell Crowe" (passionfruit and meringue).

Barbara's first day out will be at "Thank Truck it's Thursday" from 5pm on April 30 at Wandering Cooks, corner Fish Lane and Cordelia Street, South Brisbane.
