Dr Faustus serves cereal-flavoured milk in Sydney

Remember eating breakfast cereal during Saturday morning cartoon binges? The best bit was always face-planting the puddle of milk left at the bottom of the bowl, right? Pyjama sleeve wiping away chin-dribbles of Frosties-infused milk as Shaggy and Scooby solved another mystery.

Adam Kane knows this. The former bartender has opened Dr Faustus in Surry Hills, a new cafe selling foie gras BLTs, eggs with caviar, and cereal-flavoured milk.

"I wanted to do something original with the idea of a milkshake," Kane says. "I've got two small children and on rare occasions we let them have Cheerios. They love the milk at the bottom of the bowl so I figured it might be a nice thing to have at the cafe."

Cereal milk has been big in the States since Christina Tosi of New York's Momofuku Milk Bar put it on the menu a couple of years ago. Many US bars use it in cocktails and Tosi uses it to make panna cotta and ice cream.

Kane is working towards a range of 12 different cereal milks. Current breakfast-brews include Coco Pops, Cheerios, and Nutri-Grain.

"Everyone has a favourite type of cereal," he says. "We couldn't just stock one brand in the fridge."

To make each batch, Kane fills a large container with cereal, adds a few litres of milk, and lets the two get to know each other for a couple of hours before straining out the cereal.

Just like a chocolate milkshake and not crunchy.

The cereal milk is sold in coffee if you feel like a Coco Pops latte or in enamel cups with garnishes like cinnamon, dark chocolate, or the cereal itself.

Each cereal milk flavour comes in full cream, skim, and soy versions. Almond milk brews are also in the works.

Kane doesn't plan on taking his cereal milks too far into the dessert realm yet.

"Momofuku Milk Bar does the cereal milk desserts so well, and we've only got a small kitchen," he says. "Although we are thinking about doing doughnuts with a cereal milk reduction glaze."

A Froot Loops-glazed pineapple doughnut, dunked in a Frosties-flavoured latte? Oh, boy.
