Already a favourite with the visiting Noma crew, Edition Coffee Roasters will open two new Sydney stores in 2016. If you're in for a little Noma spotting, Edition should be on your star map. Rene Redzepi is a regular at the Edition coffee stand at Barangaroo, while his merry band from Copenhagen are often spotted at Edition's Darlinghurst flagship store. Co-owner Corie Sutherland revealed Edition will open late May at 200 George Street. "We're also taking a permanent spot at Barangaroo, it'll open late year, around November," he says.

The cafe spin-off is popular on both sides of the Sydney pond. Alex Savidis, a partner at Ritual Coffee Traders in Northbridge, is fronting a charge into neighbouring Castlecrag, where he and a new crew opened Back & Forth cafe last week. Former Hemingway's chef Ben Pichon has a deconstructed acai bowl on the menu. "We don't just drop the bowl and see what happens, we're sending the ingredients to someone who turns it into a gelato consistency for us," Savidis says. More conservative punters might prefer the burger with two patties and Jack cheese.
