A Banksy-style artwork of a sombrero-wearing dragster rider and a skull artworks will replace the pineapple-theme of the outgoing Ananas brasserie when El Camino Cantina opens its doors tomorrow. The Tex-Mex theme of The Rocks' new arrival is close to the heart of Thomas Pash, who runs the rapidly expanding Urban Purveyor Group, which is behind the launch.

"My first job at 15 [in the United States] was in a Tex-Mex. I was the server, cook and janitor. I love Tex-Mex, we want to do it properly, by using the right ingredients. It's about quality and fresh produce," he says.

El Camino's bar will play a big role. "Sixty per cent of people who eat at Tex-Mex restaurants have a margarita."
