Eric Koh leaves Tim Ho Wan to return to Merivale

That was quick. Eric Koh, Mr Wong's former dim sum chef who recently fronted the Sydney opening of Tim Ho Wan as its acting executive chef, has jumped ship to rejoin Merivale.

Moving faster than a lunchtime yum cha trolley in Chinatown, the ink had only just dried on reviews at Tim Ho Wan's Chatswood restaurant and Koh is making his way to Merivale's recently acquired Queen Victoria Hotel in Enmore.

With a food brief of Hong Kong-inspired street food, Koh is a natural fit to work alongside chefs Christopher Hogarth and Patrick Friesen​.

"Eric was a valuable and much-loved member of the Mr Wong team for over two and half years and we're thrilled to welcome him back to the Merivale family. He is undoubtedly one of the best dim sum chefs in this country and will add something very special to what is going to be a fantastic food experience," Justin Hemmes​ says.
