The first episode of the Australian version of Hugh Fearnley-Whittingstall's River Cottage airs on the LifeStyle Channel on Thursday, but don't expect it to be the last example of the how-to, self-sufficiency food genre.

Colin Fassnidge, of pig's ear schnitzel fame at the Four in Hand dining room, was dispatched from Paddington last week to catch a pig, kill it and then work his culinary magic for a show potentially on Discovery Channel.

''It's a pilot, if the show gets up, I'd be in Peru one week, Antarctica the next,'' he says.

Fassnidge promises no baby seals will be harmed in the filming.
