Flying Fish to open spin-off in Sydney CBD

Pyrmont's Flying Fish will open a spin-off restaurant in the city, with plans to swing open the doors before Christmas.

The eatery will be a joint project between Flying Fish chef Stephen Seckold and the Pyrmont restaurant's owner, the Dedes Group.

"Stephen will still oversee Flying Fish, but he wants to also try something else. It won't be like Flying Fish, it's something new for us," says Dedes Group CEO Lisa Hobbs.

Hobbs declined to reveal the type of cuisine, but word is it will be Japanese with a noodle bent.

She also declined to reveal the location, although the team has been linked with an upmarket CBD restaurant site quietly on the market.

Seckold was in Copenhagen and couldn't be reached for comment. He'll be a busy boy when he returns.

Twenty-four hours after he touches down this weekend, Flying Fish has a dinner where it has challenged itself to send out seven to 10 courses to diners where no two dishes are the same.
