David Yip found food fame with his ramen burger at the Good Food Month Night Noodle Markets, now he's dragged his highwire edible act in from the cold with a new CBD restaurant.

One Tea Lounge opened at 73 York Street on the weekend, the ramen burger that divided Sydney palates predictably making its way onto the opening menu.

Unsurprisingly, the rest of the food offering is equally wacky and off-piste.

"You need a point of difference to make it in Sydney, so our focus is on using green tea as an ingredient," Yip says.

And when he says he uses green tea, it finds its way into the signature cocktails and muscles into the panna cotta. Even waygu is served with green tea hollandaise.

"Eighty per cent of the menu has green tea in it. There were a couple of things we couldn't add it to, like the white chocolate tofu cheesecake," he says.

Opportunistically positioned in one of Sydney's small bar hubs, Yip is hopeful he'll attract bar hoppers who want something more substantial than the limited menu options at many small bars.

The only place green tea missed out was the interiors colour palette.

"There's a bit of green but it's not green tea green in colour. There are splashes of oranges. We've gone for modern and funky," he adds.
