Birdcage Pan Asian has opened in the site of Bistrot Bistro on Logan Road, which closed just before Christmas. Owner Darryl Marsden returned to Australia last year after 25 years working in hotels worldwide from Hawaii to Bermuda but it's his Asian experience that has proven his biggest influence here.

"I've definitely drawn influence from those countries I've lived and travelled in such as Malaysia, Indonesia and Thailand. The most important thing with this kind of food is getting the balance of flavours right," he says.

It's been a quick turnaround, with Marsden taking over the site on January 4. Former Bistrot Bistro chef Matthew Bailey is still in the kitchen and Marsden says he's only made minor tweaks of the interior.

"It was a really nice fit-out, so we're making some changes but not too much. I still have some items yet to arrive from overseas."

Birdcage will be open Tuesday to Saturday for lunch and dinner, and Marsden says there are plans to open Sunday lunch in the future.
