Newly svelte George Calombaris has come clean on the secret behind his recent trim down. According to the chef it's down to "mindful eating, more exercise and less of the processed stuff". His latest venue, casual wholefoods-focused cafe Mastic in Kew (due to open November 27) aims to celebrate his take on the clean-eating philosophy.

Tucked next to Hellenic Republic in Cotham Road, the daytime-only cafe will inhabit the space originally set aside for Greek bakery Sweet Hellenic before Calombaris's healthy change of heart.

The small breakfast-brunch offering will include acai bowls, cold-pressed juices and green smoothies along with house-made yoghurt, Will & Co. coffee and local produce. Ready-made "grab and go" meals will also feature. Calombaris says the food will be "flavourful, tasty and super-healthy", adding that he's banned all refined flours and sugars. "It's the kind of food I want to eat."

Meanwhile, Ormond residents are getting set to welcome a taste of Calombaris' "dirty Hellenic street food" side when the Jimmy Grants juggernaut pulls into North Road in the first week of December. With another two Jimmy Grants in the works for 2015 (first Richmond, then Ascot Vale) plus rumours of a Sydney outpost in late 2015, Calombaris will no doubt be thankful for the extra pep in his step just to keep up the hectic pace.
