Two-hatted Italian chef Giovanni Pilu​ will open a new waterfront restaurant in spring, but expect a few twists to the standard big-ticket Sydney waterside dining experience.

The owner-chef of Pilu at Freshwater is due to exchange contracts early this week on a giant site at the d'Albora Marinas at Akuna Bay, in Sydney's north.

Pilu at Akuna Bay will open for one service only, Sunday lunch. And the chef wants it to be affordable and family-friendly.

"I want to do a mad Sunday lunch with dishes to share, Italian beer on tap and an all-Italian wine list. I don't want to make it expensive," Pilu says.

The 180-seat venue, which includes a large sweeping deck, will be used at other times for functions.

"I'd never been there before. It really is an amazing spot right in the middle of the National Park," says the Sardinian chef, who has won a bucket of awards for the Italian food he serves from a beach bungalow at Freshwater, north of Manly.
