Alexandria's gourmet food store Salt Meats Cheese will open in Parramatta, the booming western hub snaring a growing posse of big-name central Sydney food operators.

Lured by a combination of factors, including the residential apartment boom and a Parramatta City Council program attracting new businesses with cash grants, the Parramatta Chamber of Commerce also argues lockout laws have boosted trade as locals skip nights out in the Sydney CBD.

Unlike the slightly pruned Salt Meats Cheese store opening tomorrow in Mosman, SMC co-owner Stefano de Blasi says the Parramatta outlet will be the same size as its Alexandria HQ.

"Parramatta is about 4000 square metres, so it'll have everything," he says.

Salts Meat Cheese will join new Parramatta arrivals, including Jamie's Italian and Bourke Street Bakery.

"The area is really going ahead; it's going to be the new Martin Place," de Blasi says. Salts Meat Cheese will be located at EcoWorld's West Village development.

When it opens in 18 months, West Village will add another cluster of restaurants to the Parramatta CBD. EcoWorld isn't commenting on potential tenants, but word on the streets of Parramatta is a big-name dumpling house and a leading Thai restaurant are eyeing the development.
