Hellenic food rises from Phoenix Hotel's ashes in Woollahra

In Sydney's Hellenic food invasion, a scrum of gyro joints and Greek restaurants have popped up from Drummoyne to Bexley.

Next stop on the movement's hit list is the aptly named Phoenix Hotel site, in Woollahra.

While the Phoenix fluttered in Greek mythology, the new operators of the Moncur Street property are raising the Phoenix Hotel from the ashes (its last run was as a short-lived champagne bar), embracing the theme with plans for Greek as well as a wider sweep of Mediterranean food.

Leasing agent Zorick Toltsan​ from Metro Commercial confirmed local whispers that brothers Will and Alex Cooney have taken the site.

Will Cooney has run a number of bars and restaurants.

The remodelling of the interior will start in coming weeks, with an August opening tipped.

With local craft beers and a centrepiece rotisserie, it sounds just the ticket for the neighbourhood.
