Heston Blumenthal appears to be spending more time in Australia than in his English village of Bray, spruiking for Coles and preparing for the Fat Duck Melbourne launch in February.

Now the celebrity chef has been confirmed as a late starter for Tourism Australia's Restaurant Australia gala dinner in Tasmania on Friday. He will also feature in a Tourism Australia campaign.

He joins 80 of the world's most influential international food and wine writers, broadcasters, chefs, critics and bloggers – including Good Food guest editor Alice Waters, chef Eric Ripert and writer A. A. Gill.
