The Hotel Windsor wants to appeal to locals, not just hotel guests, and one way to do that is with a discreet entrance.
As a first step in significant renovations, this month the hotel is reinstating its independent restaurant entrance on Little Collins Street, previously used to enter the White Hart Grill in the '80s.
Other development plans include a rooftop bar and restaurant, and two basement restaurants, each with individual identities.
Permits and plans for the development have been approved. "We are currently working with the government to provide enough time to complete the build," said Adipoetra Halim, the hotel's director.
Another way to appeal to locals is with a smart spring menu from chef Joel Alderson (The Brix, Attica) playing fairy godmother to lesser-loved bits such as duck heart, and pig's tail served crisp with cured bonito, shiitake and chamomile cream.
