Igor and Ludmilla Ivanovic's nine-year dream to build a headquarters for Iggy's Bread is over. Closing their existing Macpherson Street shop, they have opened a new HQ further up the block.

Already Sydney's hottest bread – in more ways than one – the legendary Iggy's queues will now form outside a charming old building on Macpherson Street. The baker will use the added capacity to toy with new products, based around ancient grains, and the building itself has green credentials.

"We've installed an energy-recovery system that uses the heat from the bakery for hot water and to heat our home upstairs and the front of the shop," he says.

Extra shopfront space has been given over to Pasta Emilia products, and Ivanovic plans to introduce a few sidelines, with an Iggy's sauerkraut on the drawing board.

The food credentials of the Macpherson Street strip will lift again next month when Bondi Road's Char Rotisserie opens in a shopfront site between the new Iggy's HQ and Three Blue Ducks.
