Last week's news that former Becasse chef Justin North is headed to The Centennial, stepping into the kitchen at the Woollahra hotel in March, garnered plenty of interest.

More details are emerging about the pub restaurant, designed by Sake restaurant designer Luchetti Krelle.

The draft menu shows North will trot out marinated tuna salad with miso and toasted sesame, steak tartare with oyster cream, as well as Sunday roasts.
