Is Waterman's lining up to serve lobster rolls at Barangaroo?

Is Barangaroo about to enter Sydney's lobster roll war? The strong word on Sydney's eat streets is that Waterman's Lobster Co, which launched early this year at Potts Point, is headed to the mega development. "I don't have any comment," says Waterman's co-owner Matt Swieboda.

The canny Swieboda, who was quick to the small bar craze at Love Tilly Devine, has been a prime mover of lobster rolls paired with a good quality wine list since opening Waterman's, on Orwell Street, in June.

Waterman's doesn't use sweet rolls, taking a traditional New England approach to its bread and lobster.

Swieboda did confirm he and his partners are weighing up between two Sydney sites for expansion.
