Collingwood eatery Josie Bones plans to change its reputation as a beer and meat bar with the appointment of head chef Alasdair Hancock, who replaces Rob Taylor. Taylor has moved to the Woodlands Hotel in Brunswick (Espresso, April 9). Hancock, who is British, moved to Australia six years ago and was most recently head chef at the city's French Brasserie. He's hoping to up the ante at 98 Smith Street, owned by MasterChef alumni Julia Jenkins and Chris Badenoch. ''We've been working on the menu over the last couple of weeks,'' says Hancock, who describes his menu as being ''fresher''. ''There's still a meat focus but the menu has changed considerably.''
