There's a new pop-up in town and with the sun still out (for now), it's an excuse to get some weekend sunshine.

Until April 3, Bang Bang Pop-Up will cut its teeth at the Boatbuilders Yard at Melbourne's South Wharf in anticipation of a bricks-and-mortar Elsternwick venue opening later this year.

Richie Ludbrook and Dave Sharry, who own Riverland, Pilgrim and the Wye River General Store and Cafe, have secured chef Matthew Dunbar (ex Longrain Melbourne) to lead the kitchen with a menu influenced by the flavours of Laos, Vietnam, Thailand and Cambodia.

The short, sharp menu, featuring things like petit chicken banh mi finished with chilli, lime and green papaya, silken and crispy tofu salad with mint and lemongrass, and barramundi steamed in a banana leaf with can't-stop-at-one taro chips, will be served with a regularly changing drinks list.

Venue manager Toby Waite will be playing with variations on sangria, margarita and the classic South Side, adding Vietnamese mint to the gin, mint, lime juice and sugar syrup mix to create a Southeast Side.

Open Fri-Sun 3pm-10pm until April 3. The permanent site is due to open in September.
