Whisky fans, your wait is over. Boilermaker House opens tonight and will be at your service going forward until 3am every night of the week.

A Boilermaker, otherwise known as the bartender's best friend, is a beer served with a nip of whisky, and that's the focus of this new Lonsdale Street bar by Greg Sanderson and the team from Eau de Vie – the Malthouse Lane speakeasy where the whisky runs free and the love of setting cocktails on fire burns strong.

The whisky collection here outshines that of its (already impressive) sister bar by 250 bottles, with a menu laid out by flavour profile rather than region. Whisky nerds, bow down to the rare gear from now defunct distilleries (there's some Port Ellen and Rosebank 21 Year Old in the mix) as well as some examples from the wild frontiers of the whisky making world – a triple smoked bourbon, and a Paul John single malt from India.

Food also takes major focus. Left as you enter is the cheese and charcuterie cabinet from which boards are assembled until 3am nightly. Boilermaker will also be open for lunch Thursdays through Sundays serving fat sandwiches of cold cuts and ploughman's boards, and for dinner nightly, doing oysters, vegetarian dishes, steaks and a choose-your-own-cheese venison burgers.

On cans, matching to the big bank of craft beers is a crack team starring Josh Crawford (Lui Bar, Loop Roof) and Max Hart of Eau de Vie. Saddle up. God speed.
